I have mastered a version of Fluffy Oatmeal Blueberry Yogurt Pancakes that is so yummy good that I had to share. As a WELLthy mom, I am learning to do a bit of research about the food that I eat or feed my family. Thus, I decided to look further into the health benefits of blueberry. I found out that those small, flared crowns and often people’s favorite are labelled Superfoods.
They are called superfoods because they are packed with nutrients and health benefits. Blueberries are low in calories and high in nutrition. They are believed to contain the highest antioxidant capacity of ALL commonly consumed fruits and vegetables. Blueberries may lower blood pressure and may also help prevent heart disease.
It’s clear that blueberries are incredibly healthy and nutritious so I have been buying them every grocery shopping trip. I came across a Blueberry Pancakes recipe video on Tastemade Facebook timeline about Simple and Healthy Pancakes that I couldn’t wait to try. Unfortunately, I did not have some of the ingredients so I challenge myself to make my version of Fluffy Oatmeal Blueberry Yogurt Pancakes recipe from scratch.
The Fluffy Oatmeal Blueberry Yogurt Pancakes recipe is very simple to make. The best part is the opportunity to get my girls involved in the process. I love those WELLthy MOMents in the kitchen with them. They also helped me by making a delicious omelette to go with the Fluffy Oatmeal Blueberry Yogurt Pancakes.
- 3 Eggs
- 1/2 cup whole wheat flour
- 2 cups Rolled Oats
- 1 tsp Baking Powder
- 1/2 cup Plain Greek Yogurt
- 1/2 cup blueberries
Put all the ingredients, except for the blueberries, in the blender and mix. Add the blueberries to the mix. Spray a pan with oil and pour a scoop of the batter. Turn when it starts bubbling. Serve warm and top it with some more blueberries. Drizzle with maple syrup and Voila! Bon Appetit!
