LadyNOD Creamy Tuna Noodle Casserole Recipe is the perfect dinner solution when you are snowed in and you need a super fast meal on the table. We did not know what the snow storm coming will bring so I made sure to stack up on perishables like our favorite canned tuna. Now that the storm has passed, I need to make good use of those perishables and my family couldn’t be happier.
- 12 oz Vegetable Radiatore (we love the Trader Joe’s brand)
- 1 medium red onion, diced
- 5 cans of tuna
- 1 fire roasted red pepper
- 8 oz fire roasted corn
- 8 oz petite green peas
- 1 can of sliced black olives
- 15 oz Alfredo Sauce
- Parmesan Cheese
Preheat oven to 350 degrees. Cook the Vegetable Radiatore according to package directions for al dente with the diced red onion. I like to bring water, sea salt, black pepper and olive oil to a boil before adding the organic pasta. Put the tuna in a bowl and drizzle some lemon juice over. Season with LadyNOD GPS (Garlic powder, black Pepper and sea Salt).
Add the cooked pasta with red onion to the tuna along with the remaining ingredients of fire roasted red pepper, fire roasted corn, petite green peas, black olives, alfredo sauce and a handful of parmesan. Mix well and put the mixture into a casserole pan. Top it with some more parmesan and the planko. Spray some olive oil on top and put it in the oven for 30 minutes covered. Uncover and put it back in the oven to brown the top, about 15 minutes. Take it out and let it sit for about 15 minutes before serving. Serve it with a side of greens and Voila! Bon Appetit!
