LadyNOD’s Healthy Easy and Yummy Stir Fry Chicken


LadyNOD Simple and Delicious Stir Fry I had the honor to feature my healthy, easy and yummy Stir Fry Chicken at our local Whole Foods and it was a hit.  I can always rely on my all-time easy and healthy recipe of stir fry chicken to win the crowd.

As a busy mom of 3, I try to make our weekly meal menu in advance to make my life easier.  I know exactly what’s for that day: breakfast, lunch, or dinner.  So without further due, I am sharing my healthy, easy and yummy Stir Fry Chicken recipe.

 

Ingredients:

  • 1 medium onion, diced
  • 3 cloves garlic, chopped
  • 1 fire roasted pepper
  • 1/4 cup olives
  • 2 tbsps capers
  • 1 tbsp thai red curry paste
  • 1 tbsp thai red chili paste
  • about 2 cups shredded Rotisserie Chicken
  • 2 tbsps olive oil
  • 2 tbsps soy ginger sauce
  • 1 tsp turmeric
  • 1 cup purple and green shredded cabbage
  • 2 baby bok choy, shredded
  • 1 cup snow peas
  • LadyNOD GPS (Garlic Powder, black Pepper and Sea Salt)
  • 2 cups of cooked brown rice

LadyNOD Healthy Easy and Yummy Stir Fry ChickenSautee diced onions in olive oil until translucent.  Season with LadyNOD GPS.  Add garlic, roasted pepper, olives and capers.  Then add the red curry paste and red chili paste.  Add broth if needed.  Add rotisserie chicken pieces and mix well.  Add the cooked rice.  Save the cabbage, bok choy and snow peas for last.  Cook for 5-10 minutes before serving.  Serve warm with a salad on the side and Voila!

LadyNOD Simple and Delicious Stir Fry I have so many versions of this recipe and that makes it for a yummy adventure.  Today I made the Stir Fry with ground turkey, instead of chicken.  I am loving baby bok choy lately so I decided it will be a wonderful addition.  I also tried red beets as an addition last week and it added so much vibrant color to the Stir Fry rice.  Cooking gives me the yummy opportunity to be creative and I love it.
