The rising temperatures here in Connecticut are causing me to resort to simple and easy recipes for my family. I was craving a Kale dish and this Kale and Quinoa with Salmon recipe is what’s for dinner. Any healthy and yummy recipe in 30 minutes is truly this foodie and mom’s goal.
I love salmon for how easy it is to make so it was my choice for this Kale and Quinoa Salad recipe.
- 1 bunch Kale, sliced
- 1 cup cooked Quinoa
- 1 cup baked Salmon
- 1 small red Onion, sliced
- 2 small Tomatoes, diced
- 1/2 cup chopped Pecans
- 1/2 cup grated Parmesan cheese
- 1/3 cup Whole Foods Market Italian Dressing
Cut kale into small strips. Massage kale with the Italian dressing. Cover and refrigerate for 30 minutes. Add in the quinoa, salmon, onion, tomatoes and pecans. Top with parmesan cheese and serve.
This Kale and Quinoa Salad was a hit with my family. My girls helped out with the onions and tomatoes. They could not believe how easy it was to make it. This Kale and Quinoa Salad recipe took about 30 minutes to make. This is my formula for a winning family meal, especially during the school week.
While the kale was in the refrigerator, I seasoned the salmon with LadyNOD GPS of garlic powder, black pepper and sea salt. I added some mustard and put in the oven at 400 degrees for 30 minutes. The quinoa takes about 30 minutes also to cook. The girls were in charge of chopping the onion and tomatoes. By the time they were done, dinner was ready.
The Kale and Quinoa Salad recipe tastes even better the next day. I wanted to enjoy for lunch the next day so I planned the servings accordingly. The girls will be out of school soon and we have plans for lots of picnics outdoors. This Kale and Quinoa Salad is definitely on the picnic menu for how easy it will transport in the picnic basket.
