The Ultimate Grilled Portabella Steak with Tofu


The Ultimate Grilled Portabella Steak with Tofu - vegetarian, vegan recipeThe Ultimate Grilled Portabella Steak with Tofu is out of this world.  We first discovered the recipe on the Ultimate Daniel Fast website and needless to say, it has become one of our favorites.  As usual, I put a bit of LadyNOD twist.

Today was one of those days for an easy and simple nutritious meal so I opted for the Ultimate Grilled Portabella Steak with Tofu.  Being home with a toddler has taught me to be intentional with my time.

The best part about making the Ultimate Grilled Portabella Steak with Tofu is that Babygirl can help.  I love to see how proud she feels when she announces at dinner time that she made it because I do my best to involve in every step as much as possible.

It’s also an opportunity to make it a home education. We are currently learning the letter M so making the Ultimate Grilled Portabella Steak with Tofu was the perfect setting to incorporate M for mushrooms.  We talked about colors and shapes. I am so thankful for those healthy whole MOMents!

Ingredients:

  • 4 Portabella mushroom caps

Marinade

  • 1/4 cup extra-virgin olive oil
  • 1/4 cup unsweetened pineapple juice
  • 1/4 cup tamari soy sauce
  • 2 tbsp chopped green onions (green parts only)
  • 1 clove garlic, minced
  • 2 tbsp chopped fresh basil

Fire Roasted Peppers Tofu

  • 8 ounces extra-firm tofu, diced
  • 1 tbsp extra-virgin olive oil
  • 1 fire roasted pepper, diced
  • 1/4 cup sliced black olives
  • 2 tbsps chopped fresh basil
  • 1 tsp each of LadyNOD GPS (Garlic Powder, black Pepper and Sea Salt)

Place mushrooms in a baking dish with gills up.  Whisk together marinade ingredients in a small bowl, and pour over caps.  Marinate at room temperature 30 minutes.

While mushrooms marinate, prepare tofu.  Place tofu in a glass dish and drizzle with olive oil.  Top with fire roasted pepper and olives.  Add basil leaves and Ladynod GPS.  Let sit at room temperature 30 minutes.  Preheat oven to 350 while tofu marinates.  Top mushrooms with tofu and bake for 30 minutes and voila!!  Bon Appetit!!
